L`Art du rotissage ,Connaitre les differentes techniques de rotissage et preparation preliminaire ,Realiser les techniques de rotissage a basse temperature , Maitriser les appoints des cuissons , Confectionner les sauces, jus de roti ,Realiser des accompagnements des rotis ,Faux filet roti et son jus parfume au romarin ,Gigot d`agneau roti, pommes boulangeres ,Pintade roti aux oignons caramelises et sa sauce au porto ,Magret de canard roti au pesto de cari poule ,Poulet en croute de sel, legumes braise
